茶叶,是安徽省石台县的传统优势产业,高海拔、富含硒元素的土壤赋予了当地茶叶独特的品质。这些年,尽管机器制茶已成为主流,但手工制茶技艺却被民间所保留,并代代传承。“茶二代”陈嘉欣便是“传承人”之一。<\/p>

自幼耳濡目染手工制茶的陈嘉欣,在大学期间所学专业也与茶叶相关。别看年纪不大,但父亲的手工制茶技艺,她已习得十之八九,制起茶来,有模有样。<\/p>

“鲜草采摘回来,别慌炒,要先摊晾,切忌阳光直射”“杀青,是通过高温去除青臭味,促进茶香形成,同时起到杀菌作用”“揉捻过的茶叶,冲泡时茶味更加浓郁”“烘干时,温度要控制在90-95度。用手一捏,茶叶就碎了,就说明烘好了”……手工制茶的各道工序、要点,陈嘉欣早已谙熟于心。<\/p>
