食材准备:牛腩、腐竹、生姜、小葱、大蒜、青椒、红椒、料酒、香料(八角、桂皮、香叶、干辣椒)、生抽、柱候酱、冰糖、盐、食用油<\/p>
具体步骤:<\/p>
1、腐竹装入大碗中提前用温水泡软,腐竹泡软后捞出切成小段,一块牛腩清洗干净后切成2~3cm左右的块状,生姜切片,小葱葱白部分切段,大蒜去掉外皮后切成小块,青红辣椒切成斜段备用;<\/p>

2、起锅,锅中倒入适量清水,凉水下入切好的牛腩、葱段、姜片、少量料酒,开大火煮开后撇去锅中的浮沫,浮沫撇干净后再煮2分钟,2分钟后用漏勺捞出直接用流动的清洗冲洗干净,沥干水分装入盘中备用;<\/p>

3、再次起锅,锅中倒入适量食用油,油热下入切好的葱段、姜片、大蒜,开中小火不断翻炒爆出香味;<\/p>

4、下入焯好水的牛腩,开大火不断翻炒炒干牛腩中的一部分水分,再加入香料:八角、桂皮、香叶、干辣椒,不断翻炒出香味,然后开始调味,加入适量生抽、一勺柱候酱、几粒冰糖,然后倒入适量提前煮好的热水没过食材,翻动均匀将调料化开,开大火煮开后倒入砂锅中;<\/p>

5、倒入砂锅后,转小火炖煮1个小时,1个小时后加入切好的腐竹,再加入适量盐调味,翻动均匀后盖上锅盖继续小火炖煮8分钟左右;<\/p>
