在绍兴菜中,千年黄酒文化是绍兴之魂,而黄酒醉菜系列,最能代表绍兴菜独一无二的风味,所谓黄酒醉万物,不同的食材,都能醉出别样的风味,当然,这也是中国菜中最具特色的美食风味之一。<\/p>
当小龙虾遇上黄酒,这道“花雕醉龙虾”就诞生了。<\/p>
目前,寻宝记米其林版的花雕醉龙虾,刚一推出就广受顾客青睐。出自国际烹饪大师、米其林大厨黄启云之手,寻宝记邀请黄启云做菜品研发主理人,就是想让传统的绍兴菜,吹进一股清新之风,以传统为正,以米其林为新,真正做到“守正出新”,让绍兴多了一道浓浓“绍兴风”的小龙虾菜肴。<\/p>
绍兴黄酒<\/p>

绍兴黄酒又称绍兴老酒,拥有悠久的历史。从春秋时的《吕氏春秋》记载起,历史文献中,绍兴酒的芳名就屡有出现,尤其在清朝时被评为全国十大名产之一。在酒类中独树一帜,酒香醇厚,馥郁芳香。怎能不饮一杯?<\/p>
臭豆腐<\/p>
<\/p>
绍兴臭豆腐被康熙皇帝誉为“青方”,有着近千年的历史。正宗绍兴臭豆腐是专门用种植的苋菜梗发酵而成的卤液浸渍的。虽然臭豆腐臭,但是它真的是越臭越美味,细品简直鲜味无穷。<\/p>
绍兴臭豆腐其名俗气、外陋内秀、平中见奇、源远流长,古老而传统,一经品味,常令人欲罢不能,一尝为快。“闻着臭、吃着香”的经典口号更是耳熟能详。<\/p>
在绍兴的街头巷尾,每天都在上演着这样的场景:一副担子,一头小灶油锅,一头木格桉板,油锅小沸,桉板上调料瓶、竹签。老人从木格里取出一块块臭豆腐放入油锅。随着“吱、吱”声响,臭豆腐渐渐转成金黄色,奇特诱人、亦臭亦香的气息弥漫开来。看着炸好的臭豆腐一块块放在铁丝篦上滴着油,馋得孩子们口水都要流出来了。老人用一根竹签串起几块,抹上红红的辣酱。孩子迫不及待地拿过臭豆腐串,一口咬下去,烫得嘴里“吸熘哗啦”,脸上却堆满了幸福……<\/p>
臭豆腐是绍兴美食的必修课,但对大多数外地人来说也是最难过的关,它是用苋菜梗汁浸制的,有蒸的也有炸的,炸的比较多见,因为吃起来方便,蒸的就有更多的家常的味道,细品品其实鲜味无穷。爱吃的是闻臭而动,不爱吃的是避之惟恐不及。个中高手吃起来是不用加任何调料,要的就是原汁原味的“臭”。<\/p>
梅干菜焖肉<\/p>

绍兴特色霉干菜,特点在于颜色酱红油亮,汤汁黏稠鲜美,肉滑溜醇香,肥而不腻,食之软烂醇香。<\/p>
霉干菜又称乌干菜,乌干莱早在《越中便览》中就有记述:“乌干菜有芥菜干、油菜干、白菜干之别。芥菜味鲜,油菜性平,白菜质嫩,用以烹鸭、烧肉别有风味,绍兴居民十九自制。”可见那时绍兴乌干莱的制作已极为普遍了。<\/p>
西施豆腐<\/p>
<\/p>
西施豆腐是浙江诸暨的风味名菜,无论是起屋造宅、逢年过节,还是婚嫁、寿诞、喜庆、丧宴,每每成为席上头道菜肴,还是老百姓经常做的家常菜。<\/p>
“多乎哉,不多也!”孔乙己的这句话火了茴香豆,也使绍兴名菜成了来绍旅游者品味古城食文化的一大流行“食尚”。于是,绍兴醉龙虾、霉干菜焖肉、油炸臭 豆腐等传统绍式名菜是越吃越香、越吃越流行。<\/p>
