食用野菜注意事项:<\/p>
第一、久放的野菜不能吃。野菜最好是现采现吃,久放的野菜不但不新鲜,而且营养成分减少,味道很差。<\/p>
第二、苦味野菜不宜多食。苦味野菜性味苦凉,有解毒败火之效,但过量食用,损伤脾胃。<\/p>
第三、受污染的野菜不要吃。郊外化工厂等处附近空气不佳,所生野菜容易吸收铅等化学物,废水边的野菜也常含有毒素,均不宜食用。<\/p>
第四、需要浸泡的野菜:山药菜、山蒜等一些野菜有微毒,不经浸泡,食后周身不适。这类野菜在煮食前,务必要在清水里浸泡两小时以上进行解毒处理。<\/p>
第五、野菜要注意烹饪方法。野菜的烹饪注重保持其“野味”,可炒食、凉拌、做馅,亦可熘、烩、烧、煮。还可做汤或生食,关键在于根据野菜不同的特点选择不同的烹调方法。<\/p>
第六、野菜取材要新鲜。洗切和下锅烹调的时间不宜间隔过长,避免造成维生素及无机盐的损失。<\/p>
第七、野菜不可多吃。野菜一般较少受到污染,也确实别有风味,可谓天然食物,但凡事讲究适度。过量进食野菜,因多数野菜性凉致寒,易造成脾寒胃虚等病。像鱼腥菜等少数野菜就有微毒,多吃有害,蕨类等野菜含过敏物质,多吃可能引起身体不适。因此食野菜不能偏食贪多。<\/p>
第八、不认识的野菜不要吃。容易发生误认的野菜不要食,以免中毒。<\/p>
