食材准备:牛腩、土豆、西红柿、生姜、小葱、大蒜、香菜、料酒、香料(桂皮、八角、干辣椒、香叶)、生抽、冰糖、盐、食用油<\/p>
具体步骤:<\/p>
1、将所需食材配料准备好并清洗干净,一大块牛腩切成2cm左右的小块,全部切好之后用清水多清洗两遍,洗净牛腩中的血水;2个土豆削去外皮,也切成2cm左右的小块,切好之后放入清水中浸泡一会儿,防止氧化变黑,泡好后捞出沥干水分;2个西红柿在底部切十字花刀,用开水烫5分钟,撕掉外皮后切成小丁;生姜切成薄片,小葱切成小段,大蒜去掉外皮后切成小块,香菜切段备用;<\/p>

2、起锅,锅中倒入适量清水,将切好的牛腩冷水下入锅中,倒入适量料酒、几片姜片、一些葱段,开大火煮开后用漏勺撇去锅中的浮沫,撇清浮沫后继续煮大概2分钟,然后捞出牛腩用热水洗净沥干水分备用;<\/p>

3、再次起锅,锅中倒入适量食用油,下入切好的葱段、大蒜、姜片以及准备好的香料:桂皮、八角、干辣椒、香叶,开小火不断翻炒爆出香味,然后倒入焯好水的牛腩,开中火不断翻炒将牛腩表面的水分炒干,随后加入切好的西红柿丁,继续不断翻炒直到西红柿炒至软烂出汁;<\/p>

4、西红柿炒出汁水后加入适量生抽调味,翻炒均匀后倒入适量提前准备好的热水,热水刚好没过牛腩就可以了,再下入几颗冰糖,开大火煮开后转入砂锅中,然后转小火盖上锅盖炖煮1个小时,40分钟后加入切好的土豆,翻拌均匀后继续盖上锅盖小火炖煮20分钟;<\/p>
