今天说的这个,它本身不起眼得很。<\/p>
但很多菜里头,加了它跟没有它,味道差的还是挺大的。有人这么形容:吃它时有一种过节时看到漫天烟火时惊喜的感觉。<\/p>
<\/p>
紫苏,长相平凡,丢在草堆里头,也只会把它当杂草一块拔了去。<\/p>
但抛开质朴的外表, 它的味道,着实让很多食物好吃了不止一丁点 。<\/p>
<\/p>
鱼塘里刚摸回来的一篮子田螺,洗净剪掉尾巴, 辣椒花椒各种香料来一点,啤酒搁一点 ,入锅大火爆炒一会。<\/p>
等香味从锅里冒出来,抓一大把洗净的紫苏丢进去,用残留紫苏余香的手掌握住锅铲开始翻炒。<\/p>
<\/p>
紫苏将田螺剩下的一点 腥气去得干净 ,经过勾芡后,汤水里各种香料成了有些浓稠的酱汁,流入壳里跟螺肉混为一体。<\/p>
在嘴唇碰着田螺那一刻, 强烈的、浓郁的香味一下子在脑子里炸裂开来 。<\/p>
<\/p>
炒田螺时,紫苏是它的灵魂。在螺蛳粉里,加了紫苏可以说是锦上添花。<\/p>
在螺蛳粉里头撒上一大把切碎的紫苏,拌一拌, 酸里有「臭」,「臭」里又藏着香 ,交杂出那种让人欲罢不能的味。<\/p>
连带着螺蛳粉的鲜味,也活了过来。<\/p>

其实只要 一点紫苏,一点酸笋,一点辣椒 ,别说田螺了, 什么贝壳或是螺类,炒出来的都是香飘飘 的。<\/p>
除了这丁点大的肉,在大块肉面前,紫苏独有的香味也不会被压下去。<\/p>
烧鱼 也好, 焖鸭 也成,又或是烤一块肥瘦相间的肉,把周围一圈烤得微微有些焦了,蘸一点辣椒面, 拿一片紫苏,包裹住整块肉 ,放进嘴里。<\/p>
<\/p>
植物的清香四散开来,不带一丝油腻。再细咬,有 肉的焦嫩 ,还有 紫苏叶上的「小绒毛」划过舌尖 ,感觉有些毛茸茸的???<\/p>
相比生菜,紫苏和烤肉有些 像孜然和烧烤的关系 ,没了它就显得寡然无味。<\/p>
<\/p>
在非肉届,紫苏也是一个不错的搭档。 家常菜中,很多人喜欢把紫苏切碎了,跟鸡蛋一块摊成一个紫苏蛋饼。<\/p>
虽然外观黄里带着黑,丑了些,但 软绵绵的鸡蛋吸收了紫苏身上的香料味 ,入口很妙,几乎可以打败我心中超爱的韭菜炒鸡蛋。<\/p>
<\/p>
紫苏身上的香气,可以掩盖掉很多食物自带的「负面」味道。<\/p>
比如五花的肥腻、鱼肉的海腥 (河腥) 味、田螺的土腥味,以及皮蛋身上那股不怎么讨喜「化肥」味。<\/p>
<\/p>
找一些辣椒,切些姜蒜,下锅用油炒出香味来,再撒一点点盐调味。出锅后倒些蚝油,放入切好的紫苏仔细拌匀了。<\/p>
最 后 连汁带叶一块淋在皮蛋 上,老香老好吃了。<\/p>
还有一些紫苏的吃法,则是 直接拿来凉拌了吃 。搁些盐醋,切些尖椒或是黄瓜丝,再滴几滴香油,跟着紫苏一块凉拌了。<\/p>
<\/p>
越是简单的调味,有时候越是开胃。你们大可以试试这样吃一次,一筷子塞嘴里,就是 扑鼻而来的清新 ,还有塞满 一嘴巴的清爽 。<\/p>
关于紫苏的吃法,还有很多,上到 陆地表面蹦蹦跳跳的紫苏牛蛙 ,下至 地里头深埋的紫苏烧土豆 。<\/p>
好像所有的菜里头加上紫苏都不会违和,甚至还让人挺想吃的。<\/p>

不过也要做好心理准备,它就像香菜、折耳根,香气特殊,总会有少部分人接受无能。<\/p>
