馋嘴牛娃特点:<\/p>
麻辣鲜香,牛蛙细嫩,味厚油重,香辣入味!<\/p>
所用原料:<\/p>
新鲜牛蛙800克,丝瓜350克,豆芽350克,大蒜子18个,鲜花椒30克,馋嘴麻辣底料10克、自制红油各适量,味精8克,美国厨师鸡粉4克,食用精盐8克,绵白糖4克,干辣椒适量,蒜苗少许。<\/p>

馋嘴麻辣底料配方制作:<\/p>
四川泡老姜1500克,四川泡红椒3500克,湘君府野山椒4000克,糍粑辣椒2500克,A料(青花椒150克,红花椒100克),B料(五香粉80克,冰糖120克,醪糟1瓶约450克),C料(姜、葱、蒜、洋葱、香菜、西芹各适量),生菜籽油4500克,猪大油3500克,红油4800克。<\/p>
详细制法方法:<\/p>
1.先将四川泡姜剁成碎末,控干多余水分,将四川泡青红泡椒、糍粑辣椒分别用搅拌机搅碎,控干多余水分备用。<\/p>
<\/p>
2.起锅点火倒入生菜籽油烧至五成热,放入C料炸成金黄色捞出不用。<\/p>
3.将A料放入锅中炸香,接着放入四川泡姜碎,改为中小火继续熬出香味,然后放入糍粑辣椒、青红泡椒,加入自制红油,用小火继续炒20到30分钟左右,待香味特别浓厚时,放入B料继续炒匀,自然放凉后盛入大铁桶中即可。<\/p>
制作要点:<\/p>
炒制时一定要用小火,否则火太大了易煳锅,注意不能熬制时间过长,只要炒出香味即可。<\/p>
<\/p>
馋嘴牛蛙制作方法:<\/p>
1.将鲜牛蛙去头去皮宰杀干净,用食用盐,白胡椒粉,鸡蛋清,生粉腌制5分钟,入七成热油中滑油,捞出控干待用备用,丝瓜切成长7厘米左右的一字条焯水备用,豆芽焯水备用。<\/p>
2.起锅烧油六成热,下入大蒜子,鲜花椒炒香,加入半炒勺馋嘴麻辣底料,三炒勺清水,加味精,食用盐,美国厨师鸡粉,白糖调味,下入牛蛙,大火烧开后改小火烧二分钟,放入丝瓜,豆芽煮熟捞出放入盛器内,牛蛙捞出放在上面,撒上蒜苗、蒜末。<\/p>
3.净锅上火烧油七成热时淋在菜品上,撒上熟白芝麻即可。<\/p>
