曹妃甸地处渤海湾,盛产河豚,传说自大禹治水时期便已经食用河豚。由于河豚的特殊性,如何分解河脉,让河豚充分体现其味美味鲜呢?俗话说:“高手在民间”,在柳赞镇、蚕沙口村以及周边渔村一直流传着“河豚二十一刀分解法”:<\/p>
<\/p>
1、沿胸根紧贴鱼体,自上向下切除左侧胸;<\/p>
2、切除右侧胸;<\/p>
3、从后侧沿背鰭根紧贴鱼体切除背;<\/p>
4、鱼体部向上,从后向前紧贴鱼体切除;<\/p>
5、从将鱼皮切开;<\/p>
6、刀向上,沿背、分界线从头部向尾部将皮切制,勿伤肌肉;<\/p>
7、分离背皮与尾连接处;<\/p>
8、用刀压住鱼尾向义部方向拉皮,使背皮与鱼体脱离;<\/p>
9、同样方法剥下胞皮;<\/p>
10、于孔与限眼之间处切下,切至五分之二,外掰见舌,沿舌下侧将口切下;<\/p>
11、使用刀尖取出左右眼球;<\/p>
12、沿盖骨分离出;<\/p>
13、切断鳃弓,使魍、舌与内脏相连。分割内脏与肌肉连接部分;<\/p>
14、分潮头与躯干;<\/p>
15、切掉尾鳍;<\/p>
16、分开头骨;<\/p>
17、取出鱼脑;<\/p>
18、沿鰓盖骨分离出鳃;<\/p>
19、分离黏膜;<\/p>
20、分割鱼舌;<\/p>
21、分离肝脏等其他内脏器官。<\/p>
